If you're just looking at these 3 options and price isn't a big factor I'd personally opt for the 2021 Deluxe Illustrated Edition. Similar content to the regular 2021 Illustrated Edition, however a bit nicer presentation. Both are nice, haven't seen many complaints about either edition suffering in the quality department.

Have a look at your LorT Deluxe and The Art of the Lord of the Rings side by side and compare. One is the first publication of Tolkien's own art set to his his story, in a 'deluxe' printing, the other is a work of reference rather than an illustrated work, printed in China, and its images are 10 times better. That in itself is a shambles.
Lastly, not a native english speaker so cut me some slack here. Now imagine an open world Game of Thrones game which is a mix of RDR2 weather and horse mechanics, and the Witcher 3 or AC Odyssey combat mechanics with multiple playable characters, all with a completely different style (I would suggest Jon Snow, Arya, Brienne, Jaime, Oberyn

For the first season, it's really up to you though I would say read first. In the long run, reading the books first will be more enjoyable so if you have the patience to read the first book before watching the show, I would definitely encourage it.
